Ingredients

  • 1 c. cooked and diced chicken breasts
  • 2 TBS butter
  • 2 TBS olive oil
  • 1 qt. evaporated milk
  • 2 c. chicken stock
  • 1/2 c. chopped celery
  • 1/4 c. flour
  • 2 cloves minced garlic
  • 1/2 c. shredded carrots
  • 1 small diced onion
  • 1 c. coarsely chopped fresh spinach or kale
  • 1/2 tsp. dried thyme
  • 1 package 16 oz. refrigerated gnocchi

Preparation

Step 1

In a large pot heat butter and oil over medium high heat. Saute onion, celery and garlic until onion is soft and translucent. Add flour and stir until well mixed. Cook for 1 minute. Add evaporated milk.

Step 2

Meanwhile, in another pan cook gnocchi according to the package directions. Add carrots and chicken to the soup pot. Stir often, it should start to thicken slightly. Add chicken stock, cooked gnocchi, spinach/kale, thyme, salt and pepper. Cover and heat for 5 minutes till heated through.
