Great Aunt Nancy's Spinach Cheese Enchiladas

Ingredients

  • 2 green chopped onions divided
  • 1 TBS margarine
  • 1 pkg 20 oz frozen chopped spinach thawed and drained
  • 14 oz Monterey Jack cheese shredded and divided
  • 1 c. sour cream divided
  • 1 can 10 oz enchilada sauce
  • 8 corn tortillas

Preparation

Step 1

Saute 1/2 green onions in margarine. Add spinach and saute till dry. Mix together sour cream and cheese. Add the spinach mixture.

Step 2

Slightly fry tortillas in oil on each side and drain between paper towels. Dip in warmed enchilada sauce and then fill with spinach mixture and roll up.

Step 3

Top with remaining sauce, cheese and onions and bake at 350 for 20 minutes. Serve with remaining sour cream.
