6 reasons melting chocolate needs a little TLC

Do NOT add water when melting

Chocolate contains cocoa butter, which is a type of fat. If you add water, it will prevent the cocoa butter from mixing with the chocolate. The water might also make your chocolate grainy and lumpy. So be sure to never add water when you're melting chocolate.
