This gorgeous and fresh salad is named after the Shopi people who inhabit the region of Shopluk— where Bulgaria, Serbia and Macedonia meet. It's popular all throughout the Balkans, but most strongly associated with Bulgarian cuisine as it was developed there in the 1950's. Generally made from tomatoes, cucumber, peppers, onion and parsley it is often dressed with sunflower or olive oil and occasionally a bit of vinegar.
