Double Stuffed Quesadillas

Preparation

Step 1

Boil 3 chicken drumsticks for at least 2 hours for maximum flavor and tenderness

Step 2

Once done, remove from boiling pot and manually shred the chicken

Step 3

Cut your oven on to 350 degrees and pour 1 teaspoon of olive oil a tortilla shell and rub the olive oil in all through out the shell

Step 4

Next, place a handful of shredded chicken onto the shell. Then top the chicken off with a generous amount of shredded mild cheddar cheese. Place another tortilla shell over the chicken and cheese. Repeat this for your second quesadilla

Step 5

Place into the oven for 5-8 minutes, until the cheese melts. Remove and let cool

Step 6

Cut each quesadilla into fourths and serve your highly anticipating wide eyed kiddos!

  • Chicken breast
  • 6 -8 bacon slices
  • 1 cup spinach leaves

Method

  1. Carefully slice the chicken breasts, forming a pocket, without cutting right through.
  2. Fry the breasts until golden brown on both sides.
  3. Layer bacon slices on a chopping board.
  4. Place the chicken breast on the far left, and top with spinach leaves, semi-dried tomatoes and cheese. Season with salt and pepper.
  5. Roll the chicken breast in the bacon slices, folding it closed as you go.
  6. Cook in the oven for 20 minutes at 375°F.
  7. Serve, and enjoy!
