Apple Dumpling Desert

Ingredients

  • 6 large baking apples, peeled, cored and sliced 1/2 inch thick (about 6 cups)
  • 1/4 cup mixed dried fruit
  • 1/3 cup sweetened apple juice
  • 1 Tbsp cornstarch
  • 1/2 tsp ground ginger
  • DUMPLINGS
  • 3/4 cup flour
  • 1 Tbsp sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup buttermilk
  • 1 Tbsp butter, melted
  • 1/4 tsp ground cinnamon

Preparation

Step 1

Preheat oven to 400F. In a large bowl, combine apples, dried fruit, apple juice, cornstarch, and ginger. Place mixture in a 9 inch cast iron skillet or a shallow heatproof casserole dish. Cover with foil and bake until bubbly, about 15 to 20 minutes.

Step 2

While the apples are baking, prepare the dumplings. In a medium bowl, combine flour, sugar, baking powder, and baking soda. Stir in buttermilk and butter to form a sticky dough.

Step 3

Remove skillet from oven, uncover and spoon dough over fruit. Sprinkle the cinnamon over dough. Cover the skillet loosely with foil and bake until dumplings are set, about 15 minutes. Serve warm.

Step 4

Variation: For a summer treat, substitute fresh peaches and cinnamon for apples and ginger.
