Toffee Slices


These divine slices are a favourite in Scotland where they appear on the menu in every tea shop.

  • Base:
  • 1/2 cup brown sugar
  • packed
  • 1/2 cup butter
  • softened
  • 1 1/2 cup flour
  • Toffee Filling:
  • 1 can sweetened condensed milk (300 ml)
  • 1/2 cup butter
  • 2 Tbsp corn syrup
  • 1 tsp vanilla
  • Chocolate Topping:
  • 6 oz bittersweet chocolate
  • broken into pieces

Step 1

In medium bowl using electric mixer, beat sugar and butter until fluffy.
Gradually beat in flour until well combined.
Press mixture evenly over base of 8" square baking pan.
Bake in 325 F oven 30 mins, until golden brown.

Step 2

Toffee Filling:
While base is baking, in medium saucepan, combine condensed milk, butter and corn syrup; cook, stirring, over medium-low heat 5 mins or until bubbly.

Remove from heat, stir in vanilla.

Pour toffee filling over baked base.

Bake 25-30 mins or until golden. Let cool completely.

Step 3

Chocolate Topping:
In top of double boiler or in bowl standing over saucepan of hot, not boiling, water, melt chocolate until smooth.

Spread melted chocolate evenly over toffee filling.

Chill before cutting into bars.
