Ingredients

  • 1/2 lb lean ground turkey
  • 1 cup onions, chopped
  • 1/2 tsp garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 1 - 15 oz can black beans, rinsed and drained
  • 1 - 10 oz can diced tomatoes, drained
  • 1 cup reduced-fat sour cream
  • ½ cup corn kernels
  • ¼ cup fat-free cottage cheese
  • ¼ tsp garlic powder
  • 4 - 8" Llow fat Tortillas
  • 1 - 10 oz can enchilada sauce
  • ½ cup shredded reduced-fat, shredded cheddar cheese

Preparation

Step 1

Preheat oven to 350 degrees.

Step 2

Coat a 9 inch square baking dish with cooking spray.

Step 3

In a large nonstick pan, cook the ground turkey, onions, garlic, chili powder and cumin over medium-high heat until onions are tender and beef is no longer pink.

Step 4

Stir in black beans and diced tomatoes and mix well. Remove from heat and set aside.

Step 5

In a small bowl, stir together sour cream, corn, cottage cheese and garlic powder.

Step 6

Place 2 tortillas overlapping on the bottom of pan.

Step 7

Top with half the meat mixture, half the sour cream mixture and half the enchilada sauce. Repeat layers.

Step 8

Bake covered for 30-35 minutes until heated through.

Step 9

Remove from oven and sprinkle evenly with cheese over the top of the casserole.

Step 10

Bake uncovered for about 10 minutes or until cheese is melted. Remove from oven and let sit for about 10 minutes to set.
