Giggy's German Fruit Cake

This is a family recipe that has been made by looks and guesstimations. That is why some of the measurements are ranges rather than definitive totals.

Ingredients

  • 1 1/2 to 2 Sticks Butter or Margarine
  • 1/2 cup Oil or Crisco
  • 2 Cups Sugar
  • 2 Eggs
  • 2 tsp. Vanilla
  • 4 Cups Flour
  • 4 tsp. Baking Powder
  • 4-5 Large Apples
  • Lemon Juice

Preparation

Step 1

Cream butter, oil, and sugar.

Step 2

Add eggs and vanilla.

Step 3

Mix in flour and baking powder.

Step 4

Mix well with hands or mixer. Press dough into 1 small or 1 large cookie tins. DO NOT PUT TOO MUCH INTO TIN, OR ELSE IT WILL BREAK ALL OVER THE OVEN WHEN IT RISES!

Step 5

Peel and slice apples into wedges approximately an eighth of an inch thick. Mix apples with a splash of lemon juice and the cinnamon, coating them.

Step 6

Layer apples in rows across the top of the cake, pushing them slightly into the cake dough.

Step 7

Bake at either 350 or 375 for about 45 minutes to an hour.

Blueberries or peaches can be substituted for the apples.
