CLOUD BREAD: The NO-CARB bread making waves on the internet

Have you ever heard  of CLOUD BREAD ? If not, it's about time. It's a special fluffy type of bread that caters to all who have problems with gluten, glucose or simply want to maintain or lose weight. Its particularity is the exclusion of flour, so it's completely gluten-free and has an airy texture and a shape that resembles the clouds, hence its name. 

It's currently trending on the Internet, especially on social networks like Instagram and Pinterest, so we thought we'd share the recipe with you!

It's an ultra-simple recipe, not to mention very tasty and practical for those who don't want to give up bread forever.

THE RECIPE:

With just three ingredients and fewer calories, this bread is a fluffy dream.

INGREDIENTS:

  • 3 eggs
  • 1/4 cup mascarpone cheese, cottage or cream cheese
  • 1/4 teaspoon baking powder

Separate the egg yolks and whites. Using an electric mixer, beat the egg yolks and cheese (brought to room temperature) until you get a nice smooth dough. In another bowl, beat the egg whites with the baking powder. Using a spatula, gently mix the two preparations together. On a baking sheet lined with parchment paper, place portions of the dough in small circles. Bake in a preheated oven at 300°F for about 15 to 20 minutes until the breads have turned golden. Once cooled, you can opt to store them in a plastic bag until the next day so they soften. You can also freeze them for later or pop them in the toaster, if using immediately.

RECIPE ADDITIONS

For a savory version, you can add Parmesan, rosemary, grated garlic, salt, pepper, spices, etc., or if you prefer sweet, you can add cocoa powder, cinnamon or other ingredients.

SERVING SUGGESTIONS

Once cooled, cloud bread can be served in multiple ways:

  • You can even bake the whole preparation in one piece and use it as a pizza base. Top with tomato sauce, mozzarella and ham, or other preferred garnishes.  
  • Try using it to make sandwiches with your favorite toppings or even a hamburger.
  • Use it as a base for Egg's Benedict or serve with scrambled eggs and bacon.
  • Serve it like pancakes with whipped cream and fresh fruit, jams, syrup, etc.
