Medallion of Pork with Orange

Ingredients

  • 1 pork tenderloin 1 1/3 lbs
  • 1 onion
  • 2 cloves of garlic
  • 2 juice oranges
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon soy sauce
  • 2 pinches 4 spice
  • 1 teaspoon oil, grapeseed
  • 4 sprigs fresh cilantro

Preparation

Step 1

Skim fat from tenderloin and cut it into medallions 8 mm thick. Peel and finely chop the onion and garlic cloves. Squeeze the oranges and get 2/3 cup of juice. Mix orange juice, onion and minced garlic, add ginger, soy sauce and pinch of allspice.

Step 2

Pour marinade over the pork and marinate for 30 minutes, turning after 15 minutes. Drain. In a very hot non-stick pan, pour the oil and sear 2-3 minutes on each side pork medallions.

Step 3

Wash and dry the cilantro sprigs, collect leaves and chop into strips. Remove from heat, sprinkle the meat with cilantro and let it relax 4 minutes, covered.
