Warm oysters in cream and vegetables

Ingredients

  • 24 oysters,
  • 2 leeks,
  • 1 small carrot,
  • 1 shallot,
  • 1 pinch black pepper,
  • 1 knob of fresh butter,
  • 1/4 cup of sour cream

Preparation

Step 1

Open the oysters, collect the juice. Pass through a chinois. Reserve oysters, retrieve the second juice, then rinse until the water runs clear. Cut vegetables into cubes of 2.5 mm thick (leek, carrot & shallot) cook 5 minutes in the microwave with a knob of butter, pepper and 2 tablespoons of oyster juice.

Step 2

In a frying pan, boil the rest of the oyster juice, stir in the vegetables, leave 2 minutes, stir in sour cream, let it reduce 2 minutes, add the oysters and serve immediately, place the oysters in a dish topped with cream sauce and vegetables.
