Grandma's Meat Loaf (for two)

Grandma made the best meatloaf I've ever had because there was a sweet, tangy sauce on it and there was always lots of sauce. It even tastes yummy when a little overcooked as the sauce gets a little crispy so you can't really go wrong with this one!

Ingredients

  • Loaf ingredients:
  • 1 egg
  • ground beef
  • 1 onion (chopped into small pieces)
  • 8 saltine crackers (crumbled into small pieces
  • salt
  • pepper
  • garlic powder
  • 1 bread pan
  • Sauce ingredients:
  • 3/4 cup of Kraft (chicken & ribs) BBQ sauce
  • 1/4 cup of Ketchup
  • onion (chopped small)- use some of the onion you chopped for the loaf
  • 1tsp white sugar
  • a dash of garlic powder

Preparation

Step 1

Preheat the oven to 350 degrees.

Combine all loaf ingredients in a bowl and mix together with your hands; making sure that all ingredients are mixed well.

Step 2

mold the loaf mixture into the shape of a loaf of bread and place in the bread pan. It's good if you have space on the sides of the loaf (between the loaf and the pan) so that you can put sauce on both the top of the loaf and the sides.
Set the loaf aside while you prepare the sauce.

Step 3

To make the sauce combine all of the sauce ingredients in a bowl and mix well.

Step 4

Use about half of the sauce to cover the top and sides of the loaf and then set the rest of the sauce aside to use for basting the loaf later on. Make sure there is a good amount of sauce for the loaf. If you run low just make some more.

Step 5

Now bake the meat loaf for 30 minutes and then remove; add the rest of the sauce over the loaf and put back in the oven to bake for another 30-60 minutes. After 30 minutes check on it often to make sure it doesn't burn.

Step 6

When done the sauce will appear nice and thick and harder on the loaf. When you cut into the loaf you can check to make sure that the beef is well cooked (the beef must all be a brown-grey color; never red or pink). If you see red/pink meat then push the loaf back together and bake longer.

You can also try using a tooth pick to check if the beef is done by poking it through the top and sides to see if it comes out clean. If it comes out clean it is most likely done but if you aren't sure then slice a peice off and check it that way.

Grandma always served this with mashed potatoes and cream of corn but you can eat it any way you like. It is a fast, easy meal and was always one of my favorites! Enjoy!
