  • butter 1/2 C (100g)
  • cooked egg yolk 2
  • salt 1 pinch
  • confection sugar 1/2 C(60g)

1. Boil 2 eggs, take the yolks and press on through a sift to powderize the yolk.

Step 2

2. Soften the butter, add sugar and salt. Beat till fluffy and light.

3. Add yolk into the butter mixture, Mix.

4. Mix well cornstarch and cake flour. Add into butter to form a dough. The final texture should be a little dry. If the dough is too dry, pour in some milk. Freeze for 1 h.

5. Take out the dough and divide into small pieces. Roll into small balls and press down the center with your thumb. The natural cracks on the edge is what you want. To add more flavor, top off with dark chocolate chips or cranberries.

Step 6

6. Preheat oven 370 F. Bake 15 min till the edge is slightly golden brown. Watch the time closely as the cookies burn easily.
