COCONUT BANANA CHOCOLATE GRANOLA MUFFINS

I came up with this recipe while trying to figure out something to make for my husband's breakfast on the go. These muffins are sweet and salty.

Ingredients

  • 3 cups flour
  • 2 1/2 cups sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp salt
  • 3/4 cup vegan margarine
  • 2 tbsp ground flax and 1/2 cup water
  • 3/4 cup coconut milk
  • 2 tsp vanilla extract
  • 1 tsp coconut extract
  • 1 tsp almond extract
  • 1 tsp banana extract
  • 1/2 cup vanilla yogurt
  • 2 cups granola
  • 1 cup sweetened coconut, shredded
  • 3/4 cup chocolate chips

Preparation

Step 1

Mix together all dry ingredients. Combine all wet ingredients. Stir wet ingredients into dry ingredients until just combined.

Step 2

Preheat oven to 350*F. Bake for 25-30 minutes until no longer wet in the middle.
