Banana crumb muffins

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3 large ripe bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted
  • Topping:
  • 1/3 cup packed brown sugar
  • 1 tbsp. all-purpose flour
  • 1/8 tsp. groud cinnamon
  • 1 tbsp. butter

Step 1

In a large bowl, combine dry ingredients. Combine and mix well bananas, sugar, egg, and butter. Stir into dry ingredients just until moistened. Fill greased muffin cups three-fourths full.

Step 2

Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins.

Step 3

Bake at 375 degrees for 10-12 minutes. Cool in pan 10 minutes before removing from pan.


Cooking results can vary depending on oven. Check muffins with toothpick to see if they are done. Do not overcook! Also, recipe can make 12 large muffins - adjust cooking time 18-20 minutes.
