Grilled Grouper BLT

Grouper is very mild and picks up on whatever you cook it on/with. So, it's super easy to remove the "fishy" taste.

Ingredients

  • Marinade
  • •1 tbsp. olive oil
  • •1 red onion, finely diced
  • •4 cloves garlic, minced
  • •2 tbsp. fresh thyme, chopped
  • •¼ cup Gourmet-Style Barbecue Sauce
  • •¼ cup steak sauce
  • •2 tbsp. freshly squeezed lemon juice
  • •salt and freshly ground black pepper
  • •6 grouper fillets, skinless, 5 oz. each,
  • 1 inch thick
  • •3 tbsp. Seafood Seasoning and Rub
  • •12 slices double-smoked bacon
  • •12 slices sourdough bread, buttered
  • •6 leaves green leaf lettuce
  • •1 beefsteak tomato, sliced
  • Tartar Sauce
  • •2 dill pickles, finely chopped
  • •2 small shallot, finely chopped
  • • 2 green onions, finely chopped
  • •2 cups mayonnaise
  • • 4 tbsp. capers, chopped
  • •2 tbsp. freshly squeezed lemon juice
  • •cayenne pepper, salt and freshly ground black pepper to taste

Preparation

Step 1

In a medium saucepan, heat the oil over medium-high heat. Sauté the onion and garlic for 2 to 3 minutes, or until tender. Add thyme and green onions and cook for 1 minute more, stirring continuously. Add the Gourmet- Style Barbecue Sauce, steak sauce, and lemon juice. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes, stirring occasionally. Season with salt and pepper to taste and pour into a glass dish. Cool completely.
2.Season the fillets with Seafood Seasoning and Rub, massaging well into the flesh. Set in the marinade and turn to coat well. Marinate at room temperature for 45 to 60 minutes.
3.Preheat grill to medium-high, about 450°F.
4.Remove fillets from the marinade, reserving the marinade. Grill for 5 to 6 minutes a side, or until the fillets are just cooked through and flake easily, basting liberally with the marinade while cooking. Discard marinade when fish is done.
5.Grill bacon slices until crispy.
6.Place bread slices on the grill, buttered side down first. Grill to golden brown and crisp.
7.Place 6 slices of toast buttered side up and set lettuce leaves on them. Top with the grouper fillets, the bacon, and then the tomato. Liberally spread Tartar Sauce on the buttered side of the remaining slices of toast and top the sandwiches. Serve immediately with more Tartar Sauce on the side.
8.For the Tartar Sauce combine the ingredients in a small bowl and mix well. Cover and refrigerate until needed.
