Dark Chocolate Black Bean Brownies

The BEST black bean brownies I have EVER made!

I have made numerous batches of black bean brownies because there are just so many ways to make them. I finally perfected my method and I can honestly say these have been the best (so far!). I am soooo excited to share this recipe with you! These brownies are dense, FUDGY, and CHOCK-FULL of chocolate chunks!

Ingredients

  • 1 can black beans
  • 3 egg whites
  • 1/2 cup pureed pumpkin
  • 1 packet mocha/chocolate/cocoa powder (like Ovaltine or Nescafe)*
  • pinches of salt and vanilla extract
  • two full pipettes of chocolate stevia drops**
  • 1 dark chocolate bar, crushed

Preparation

Step 1

Preheat oven to 350 degrees. Rinse the beans and puree them with the egg whites in a food processor until VERY smooth. Add the remaining ingredients, except the chocolate bar, into the food processor and blend for another 30 seconds. Fold in the crushed chocolate bar. Bake in a square 8x8 pan for 45-50 mins.

NOTES/SUBSTITUTIONS:
*you can use 1/4 cup cocoa powder
**you can use sweetener of your choice (dry or wet) & to the amount of your liking

-although this recipe has pumpkin, it just acts as a wet ingredient. These brownies do not taste like pumpkin, FYI
