Fried Plantain with a Black Bean Center

This is a variation of a Guatemalan recipe called "rellenitos de platanos".

Ingredients

  • 1 bag of black beans
  • 5 ripe plantains
  • 1 heaping pinch sugar
  • 1 pinch salt
  • flour

Preparation

Step 1

Refry the black beans.

Step 2

Two days later, peel and chop plantains. Boil in a large pot until tender, then mash.

Step 3

Add sugar to plantain, and add salt to refried black beans.

Step 4

Take a large spoonful of plantain and work a hole into the center. Put a smaller spoonful of beans in the middle off the plantain, close it up.

Step 5

Roll lightly in flour and deep fry until golden.
