Beer Marinade

Beer is not only a compliment for grilled food, but works magic as a marinade.

Ingredients

  • 1 bottle of you favorite beer
  • 1/4 cup Dijon mustard
  • 1/4 cup canola oil
  • 1 small minced onion
  • 1 chopped celery rib
  • 4 chopped or minced garlic cloves
  • 1 bay leaf
  • 1/2 Tbsp paprika (hot paprika is preferred if you can find it)
  • 1/4 tsp caraway seeds
  • pinch of salt and pepper

Preparation

Step 1

Add either beef, chicken, or pork to this mixture and let marinade at least 4 hours (ideally overnight) in the refrigerator before grilling.

The use of different styles of beer or ales will produce wonderfully different flavors. I recommend trying not only lagers (your standard beer), but also English Ales, Stouts, etc. Each time you marinate substitute a different one for variation.
My favorite so far is Rahr & Sons "Ugly Pug" a black lager brewed in Ft. Worth, Tx.
