simple vanilla and agave cupcakes

Ingredients

  • 2/3 cup soy milk
  • 1/2 tsp apple cider vinegar
  • 1/3 cup canola oil
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 1/3 cup all purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup agave nectar

Preparation

Step 1

line a muffin pan with cupcake liners. preheat the oven to 325F. Mix the soy milk and apple cider vinegar in a large bowl and allow to sit for a few minutes to curdle. beat in the agave, oil and extracts. sift in the flour, baking powder, baking soda and salt. mix just until smooth. fill liners 2/3 full and bake 20 to 22 minutes or until a toothpick inserted in the center comes out clean. Cool completely and ice as desired. Store remaining cupcakes in refrigerator.
