Perfect Mornings: Vanilla Shortbread Cookies

Tea is a refreshing beverage that energizes and prepares us for our daily chores. There are several people who cannot start their day without a cup of tea and rightfully so, tea has ingredients that revitalizes our entire body. To munch something along with tea, we generally eat biscuits as they complement each other perfectly. Shortbread is a type of biscuit which originated in Scotland. It’s a mixture of flour, butter and white sugar and can be molded into several shapes, the traditional being one large circle divided into several segments.
Coming back to tea, this beverage comes in several variants. There is black tea, green tea, lemon tea, ginger tea and many more. There’s also earl grey tea, a blend of citrus flavor and oil extracted from the peel of bergamot orange. For our recipe, we will be focusing on the latter as combined with shortbread this duo makes for the perfect tea time. Preparing this at home is easy and you can invite friends over for evening tea with shortbread. We will be learning to prepare shortbread cookies and glazing it with Tetley’s earl grey vanilla tea. The outcome is amazing as these shortbread cookies transform into delicious munchkins for a perfect tea time snack.

Ingredients

  • • All-purpose flour – 1 2/3 cups (400ml)
  • • Cornstarch – ½ cup (125ml)
  • • Salt –½ tsp (2ml)
  • • Softened unsalted butter – 1 cup (250ml)
  • • Icing sugar – ¼ cup (60ml)
  • • Granulated sugar – ¼ cup (60ml)
  • • Tetley earl grey vanilla tea – 2 bags
  • • 35% whipping cream – 2 tbsp (30ml)
  • • Tetley earl grey vanilla tea – 1 bag
  • • Icing sugar – 1 cup (250ml)

Preparation

Step 1

- Mix flour with salt and cornstarch until combined and set it aside
- Take a separate bowl and place icing sugar, granulated sugar and butter in it
- Open tea bags and add tea leaves to that bowl
- Now beat the mixture till it’s fluffy and light
- Add flour mixture to it and beat it again until the dough comes together
- Divide the dough into 2 portions and shape in into 1 ½ inch square-shaped logs
- Wrap the dough and chill it for at least an hour or until the mixture is firm enough to be sliced off easily
- Preheat the oven to 160C (325F)
- Line baking sheets with parchment paper
- Slice each log into ¼ inch thick slices and place 1 inch apart on the prepared baking sheets
- Bake the slices in batches for 15-20 minutes or until pale golden on the bottom
- Cool it completely on a rack

Step 2

- Heat cream for 30 seconds in a microwave
- Now open the tea bag and add leaves to the cream
- Steep and stir for 5 minutes
- Gradually stir in icing sugar until smooth
- Pour it into a re-sealable plastic bag
- Snip a small hole in the corner
- Sprinkle it over the shortbread
- Let it stand for 15-20 minutes until the glaze is set
