- Béchamel sauce made with 3 tablespoons butter, 1/2 cup flour and 2 cups milk, seasoned with salt and freshly grated nutmeg
- 1/2 cup grated Swiss cheese (or Gruyère, if you can find it)
- 3 ounces Spanish smoked ham (Serrano)
- 1 cup flour
- 1 1/4 cup bread crumbs
- 2 eggs, beaten
- 1 quart oil for frying
