Easter Biscuits

These spicy fruited biscuits were originally baked and eaten around Easter, particularly in the West Country, but a
- 110 Gram Butter, diced (4 oz)
- 75 Gram Caster sugar (3 oz)
- 1 Egg, separated
- 200 Gram Plain flour (7 oz)
- 1/2 Teaspoon Ground mixed spice
- 50 Gram Currants (2 oz)
- 1 Tablespoon Mixed peel, chopped
- 2 Tablespoon Brandy or milk
- Caster sugar, for sprinkling
Macaroons

These little biscuits can be served as petit fours and the mixture may also be used as a filling for tartlets
- 2 Egg whites, stiffly beaten
- 110 Gram Caster sugar (4 oz)
- 75 Gram Ground almonds (3 oz)
- 1 Teaspoon Vanilla essence
- Rice Paper
Tipsy Chocolate Heart

For a children's recipe, dip the biscuits in orange juice and sandwich together with chocolate custard
- 50 Gram Plain chocolate (2 oz)
- 300 ml Thick custard ( 1/2 pint)
- 4 Tablespoon Sweet sherry
- 200 Gram Packet chocolate chip and nut cookies (7 oz)
- 150 ml Double cream, whipped ( 1/4 pint)
- Chocolate, to decorate
- Glace cherries, to decorate
Chocolate Eclairs

Instead of making the cocoa glace icing for this recipe you could use melted chocolate
- 65 Gram Choux Pastry (2 1/2 oz)
- 300 ml Double cream (10 fl oz)
- 2 Tablespoon Milk
- 225 Gram Icing sugar (8 oz)
- 2 Tablespoon Cocoa Powder
- 3 Tablespoon Boiling water
Pumpkin Pie

When the weather is chilly, there's nothing more comforting than a warm slice of pumpkin pie!
- 40 Gram Pecan nuts, chopped (1 1/2 oz)
- 250 Gram Pumpkin, puréed (9 oz)
- 450 ml Single cream (15 fl oz)
- 125 Gram Light brown soft sugar (4 1/2 oz)
- 1/4 Teaspoon Salt
- 1 Teaspoon Ground cinnamon
- 1/2 Teaspoon Ground ginger
- 1/4 Teaspoon Ground cloves
- 1/4 Teaspoon Grated nutmeg
- 2 Eggs
- ---- pastry ----
- 165 Gram Plain flour (5 1/2 oz)
- 1/2 Teaspoon Salt
- 110 Gram Lard or vegetable fat
- 2-3 Tablespoon Iced water
