VIDEO: Sweet Potato Toast

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!

  • 1 large potato
  • 5 cups flour
  • 1 packet yeast
  • 1/2 cup sugar
  • 2/3 cup scalded milk, cooled to room temp

Boil potatoes and reserve water

  • 6 medium potatoes peeled and cubed
  • 1 and 1/2 C potato water
  • 1 Tbsp salt
  • 2 and 3/4 C sugar
  • 3 eggs
  • 7/8 C oil
  • 2 and 1/2 C mashed potatoes (from above)
  • 1 and 1/2 pkg of dry yeast
  • 1/4 c milk
  • 9 C flour
