Ingredients

  • Green salad:
  • Mixed greens
  • 10 radishes
  • ½ can of corn
  • ½ can of hearts of palm
  • A dozen small cherry tomatoes
  • 6 eggs (+ one tablespoon white wine vinegar for cooking eggs)
  • 4 slices of bread
  • 6 slices smoked bacon
  • For the vinaigrette:
  • 1 tablespoon balsamic vinegar
  • 2 tbsp olive oil

Preparation

Step 1

Wash and dry salad, wash tomatoes and radishes, drain corn, and hearts of palm

Step 2

Cut vegetables into small pieces.

Step 3

In large pot boil water with a dash of white wine vinegar.

Step 4

Meanwhile grill the slices of bacon. Keep warm. Next, toast the bread.

Step 5

Break the egg in a cup, and when the water boils rapidly, reduce heat to obtain a slight simmer, then pour the egg into water. Cook 2 min. Do the same with others.

Step 6

In a large plate, arrange the lettuce leaves, add the diced vegetables, season with the vinaigrette and a slice of bread, 2 slices of grilled bacon and top with poached egg.
