Rice and Tomato salad

Ingredients

  • Rice (6 tablespoons should be good)
  • Pineapple (small can or half a fresh pineapple)
  • Tomatoes (a large tomato)
  • Olive oil
  • Reduced sugar ketchup

Preparation

Step 1

Cook rice, drain and cool.

Step 2

Cut tomatoes into small wedges and add them to the cold rice.

Step 3

Cut pineapple into small cubes and add to rice

Step 4

Prepare the dressing by putting a little olive oil mixed with reduced-sugar ketchup (pineapple is already sweet at the base).

Step 5

Salt and pepper lightly. Mix everything together, taste and adjust seasoning if necessary.
