Spanish Meatloaf

Ingredients

  • 5 oz stale bread (1 1/2 cups breadcrumbs)
  • 3-4 oz chorizo
  • 1 clove of garlic
  • 2 eggs
  • 1 large handful of grated cheese
  • 1 bunch of mint
  • 1 cup of milk
  • Salt - Pepper

Preparation

Step 1

Preheat oven to 400 °

Cut bread into small pieces and mix coarsely. Pour into a bowl. Mix the sausage, pour into the bowl. Chop mint and chop garlic, add them also. Finally add a large handful of grated cheese.

Step 2

Break 2 eggs into a bowl, add milk and whisk it all together. Add salt and pepper. Pour egg mixture into the bowl. Mix well with fingers. Wait 5 minutes then firmly pack in a baking loaf dish.

Step 3

Spread a piece of foil on baking sheet and return the contents of the dish on baking sheet. Cover with the foil and bake for 35 minutes. After this time, remove the foil and return to oven 5-10 minutes. Remove the loaf and then let cool. Then cut into slices or squares. Serve hot or cold.
