Carrot Halwa

  • carrots
  • 2 cup Milk - boiled
  • Sugar - 1 cup (according to your taste)
  • Ghee - 3 tbsp or more according to your taste
  • Mawa ¼ cup(optional)
  • Cashew nuts chopped
  • Cardamom (optional)
  • crushed Saffron - a few strands

Step 1

In a thick bottomed non-stick pan(take a wide pan so that the milk evaporates fatser while cooking),add a tbsp of ghee and saute the carrots for 3-5 minutes,or till the carrots become slightly pale.

Add milk and give a good stir. Simmer the gas and let the carrots cook in the milk on a low flame.Stir once in a while.
(EITHER..add cashew nuts and dried grapes NOW.. OR.. In another pan,add a tsp of ghee and roast them till they turn golden brown in colour and add at the end).

Mix in the sugar cook 10 minutes.add mawa..mix.. Add saffron mixed in few drops of water,(optional…add ghee a tsp at a time till the carrots gets a nice glaze and dry up)
