Preparation

Step 1

Mix 6 hands of flour and salt in a large bowl. Add water until a doughy consistency is achieved. If the dough is too sticky to easily handle, add more flour. If the dough is crumbly, add a little more water until workable.

Step 2

Roll out the dough, and fold in half, forming a light crease in the center. Unfold.

Step 3

Make the filling:
boil and drain the spinach, adding hamburger, salt, pepper, parsley flakes, breadcrumbs, parmesan, and onion powder, and one egg. Mix well. If the filling does not seem very moist, mix in the second egg.

Step 4

Spread the filling on one half of the rolled-out dough. Try not to make it too thick (otherwise your ravioli will explode).

Step 5

Fold the dough in half at the crease (the filling should be covered).

Step 6

Roll with a ravioli rolling pin, and cut with a ravioli cutter. Hand press any ravioli sides that are not sealed all the way.

Step 7

To cook your ravioli, boil for 10 minutes. To store for later, place on floured wax paper in an airtight container in the freezer. If you put multiple layers of ravioli in one container, separate each layer with wax paper and a sprinkling of flour.
