BREADED PORK CHOPS WITH VEGETABLES

Ingredients

  • INGREDIENTS:
  • 2 pork chops
  • 1 large russet potato
  • 6 mushrooms
  • 1 tbsp cooking oil
  • 2 tbsp mustard
  • 1/4 cup seasoned breadcrumbs
  • Pepper
  • fresh or frozen vegetables

Preparation

Step 1

DIRECTIONS:
Preheat oven to 375F.
Scrub potato leaving skin on and cut in half lengthwise.
Place potato halves (cut side up) in a greased 9x11 oblong pan.
Brush cut side of potato with cooking oil and season with pepper.
Cook for 15 minutes.

Step 2

While potatoes are cooking, rinse & pat dry the pork chops & mushrooms.
Brush the pork chops & mushrooms with mustard.

Step 3

Coat the pork chops & mushrooms with seasoned breadcrumbs.

Step 4

Remove potatoes from oven after 15 minutes and add the pork chops & mushrooms.
Return to oven and continue cooking for an additional 35 minutes or longer depending on thickness of pork chops.

Step 5

While the chops, potato & mushrooms finish cooking, steam your favourite vegetables on the stove top and serve when ready.
