Banana chocolate chip bran muffins

A slight modification to Kellogg’s* All-Bran* cereal's recipe. These come out perfectly moist with a hint of sweetness and loaded with fibre.

Ingredients

  • 1 1/4 cups Bran cereal
  • 1/4 cup ground flax seed
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 cup palm sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup canola oil
  • 3 large very ripe bananas (reserve 12 thin slices, mash remainder)
  • 1/3 cup semi-sweet chocolate chip

Preparation

Step 1

Preheat oven to 400 degrees F (200 degrees C). Lightly coat 12 (2/6.5 cm) non-stick muffin pan cups with cooking spray.

Step 2

In medium bowl, combine cereal and milk. Let stand for about 2 minutes or until cereal softens.

Step 3

In large bowl, combine flour, flax seed, sugar, cocoa powder, baking powder, baking soda and salt. Set aside.

Step 4

Add egg, oil and mashed bananas to cereal mixture; beat well. Add liquid mixture to dry ingredients, stirring only until just combined. Fold in chocolate chips. Portion batter evenly into prepared muffin cups. Top each cup with a reserved banana slice.

Step 5

Bake in preheated oven for 20 minutes or until tops spring back when lightly touched.

For a healthier version, reduce the sugar and oil by half and replace the chocolate chips with small diced pieces of apples.
