Caribbean Chicken with Peaches and Cream

This is a family recipe. My friends and family love it and often ask for it. It can be served on weeknights or weekends and pairs well with a crisp white wine. It is definitely our favourite pasta dish!

Ingredients

  • 2 cups penne pasta
  • 1 large chicken breast, cooked and sliced
  • a small bunch of asparagus, cooked, trimmed and cut into 2 inch lengths
  • 1 cup sliced canned peaches, drained
  • 1/2 cup unsweetened, shredded coconut
  • 3/4 cup whipping cream
  • 3/4 cup shredded parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • salt and pepper

Preparation

Step 1

Cook pasta in large pot, drain and return to pot. Add all ingredients, mix well and gently heat. Serve immediately. Enjoy!

Garnish with rosemary sprig on each plate. Serve with more parmesan cheese, if desired.
