Manchurian Gobi

This is a combination of Asian and Indian flavors. The cauliflower acts as the meat ingredient in this recipe.

Ingredients

  • 1 cauliflower head, cut into florets
  • 1 tbsp tomato paste
  • 1 tbsp garlic, minced
  • 1 tsp ginger, minced
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 1/2 cup AP flour
  • 1/3 cup glutenous rice flour
  • SAUCE
  • 2 cups bok choy, chopped
  • 1 cup carrot sticks
  • 1 tbsp garlic, minced
  • 1 tsp ginger, minced
  • 1/2 sweet onion, minced
  • 3 tbsp cornstarch in 1/2 cup water
  • 1/4 cup red wine vinegar
  • 1/2 tbsp salt
  • 1/2 tbsp soy sauce
  • 1/2 cup tomato sauce
  • 2 cups vegetable bullion
  • 2 tbsp mango vanilla yogurt
  • 1 tbsp brown sugar

Preparation

Step 1

Mix together flour, 1 tbsp tomato paste, 1 tbsp garlic, 1 tsp ginger, 1 tbsp brown sugar, 1 tsp salt, and enough water to make a thick paste.

Step 2

Dip cauliflower in the flour mixture. Fry until golden on all sides.

Step 3

Caramelize onion, garlic, and ginger. Add remaining vegetables, cook 5 minutes.

Step 4

Add sauce ingredients to onions. Simmer 10 minutes until vegetables are just cooked. Toss cauliflower in sauce until completely covered. Serve over rice.
