Ingredients

  • DRESSING
  • 1/2c white vinegar
  • 1c sugar
  • 1c olive oil
  • SALSA
  • 2 cans white sweet corn (drain)
  • 1 can black beans (drain and rinse)
  • 1 can black eyed peas (drain)
  • 4 stalks of celery chopped
  • 1 4oz can chopped jalapenos (drain)
  • 1 4oz jar pimentoes (drain)
  • 1/2 - 1 onion chopped

Preparation

Step 1

Heat dressing ingredients until sugar is dissolved and set aside to cool.

Step 2

Mix all salsa ingredients in a bowl and toss.

Step 3

Pour dressing over salsa and serve with tortilla chips.
