Ingredients

  • 1 3/4 pounds carrots
  • Powered sugar
  • Vanilla
  • 1 1/2 teaspoons baking powder
  • 1/2 cup sugar
  • 3 eggs
  • 2 tablespoons flour
  • 3 tablespoons butter

Preparation

Step 1

Boil the carrots until tender and drain well.

Step 2

While the carrots are warm, add sugar, baking powder, and vanilla.

Step 3

Whip with a mixer until smooth, add flour and butter, mix well.

Step 4

Whip the eggs separately to pour into the mixture.

Step 5

Pour the mixer into a baking dish, fill half way because it will rise.

Step 6

Bake at 350F for about an hour or until the top is golden brown.

Step 7

Sprinkle with powdered sugar and enjoy.
