Favorite Fudge Recipe (Cocoa Powder Fudge)

A few years ago, I realized that candy was one area of cooking I had very little experience with. In particular, fudge seemed like a kind of magical food which appeared at sweets shops. So, I set forth to learn how, and after about 2 years of trial and error, I have created a fudge recipe I like.

Ingredients

  • ¼ C Butter
  • 1 C Sugar
  • ¼ C Cocoa Powder
  • 1/3 C Milk
  • 1 Tbs Light Corn Syrup/Honey
  • 1 Tsp Vanilla
  • 1/3-½ C of Crushed/Chopped Nuts(optional)
  • 1-2 C Powdered Sugar

Preparation

Step 1

Melt butter slowly in microwave just until completely liquid

Step 2

Meanwhile, mix sugar and cocoa powder in a sauce pot

Step 3

Add milk, honey and butter and mix until homogenous

Step 4

Heat mixture on stove over medium-high heat, stirring constantly, until mixture reaches 234° F, then remove from heat immediately.

Step 5

Let cool until warm, but not scalding to the touch. It is very(!) important that you do not disturb the fudge during the cooling stage, as this will break up the sugar crystals and make your fudge grainy

Step 6

Stir in vanilla and nuts

Step 7

Mix in powdered sugar gradually until mixture resembles warm cookie dough in texture (The exact amount of powdered sugar needed varies depending on climate/weather, so just watch the consistency as you mix. If it is too thin/liquid, add more. If too stiff, you've added a bit too much)

Step 8

Pour in buttered cake pan and mold with your fingers until it smoothly covers the whole of the pan

Step 9

Chill in refrigerator until whole pan is refrigerator temperature (about 45 minutes)

Step 10

Enjoy!

1 Honey is slightly less consistent in texture, but has a much better flavor. I prefer honey
Other Flavor Options
Butterscotch: Leave out cocoa powder and substitute brown sugar for white
Vanilla:Leave out cocoa powder and add 1-2 Tbs vanilla instead of amount listed
Peppermint Chocolate: Substitute ½ tsp of peppermint extract for vanilla
