Eggplant parmesan

Ingredients

  • 1 ripe eggplant sliced
  • 1 lb of fresh mozzarella sliced
  • 3 cups of bread crumbs
  • 6 eggs
  • 2 tablespoons of oil
  • 1 package of angel hair pasta
  • 1 jar of tomatoe sauce

Preparation

Step 1

First dip eggplant into the eggs and then bread crumbs

Step 2

Add the oil to a pan and then add eggplant on med-high heat

Step 3

Fry untill the sides are lightly browned on both sides

Step 4

Boil pasta in a pot and drain, as well as sauce in another pot

Step 5

Place a serving of pasta on the plate, eggplant on top, sauce, and then a slice of fresh mozzarella, and topped by more sauce
