Ingredients

  • Sugar
  • 2 Eggs
  • Vanilla
  • Mascarpone
  • Oil
  • Flour
  • Baking Soda
  • Salt
  • Lemon zest
  • Blueberries (fresh or frozen)
  • Powdered sugar

Method

  1. Preheat the oven to 350° F. 
  2. In a bowl, combine the sugar and eggs and beat with a mixer. 
  3. Add the vanilla, mascarpone, and oil, and beat again.
  4. In a separate bowl, combine the flour, baking soda, salt, and mix until thoroughly integrated.
  5. Gently sift the flour mixture in with the wet mixture, and mix. 
  6. Add the lemon zest and fold in. 
  7. In a buttered cake dish, pour in a layer of cake mix and top with blueberries, alternating until all the batter is used up. 
  8. Bake in oven for 30 minutes. 
  9. When golden and ready, remove from oven and let cool for 10 minutes.
  10. Dust with powdered sugar.
  11. Serve... and enjoy!

 Looking for something indulgent? These velvety chocolate beetroot cakes will hit the spot. 

INGREDIENTS

  •  1.3 cups beetroot
  • 2 eggs
  • 2 tablespoons oil
  • Juice of 1/2 lemon
  • 4/5 cup flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • Melted dark chocolate

METHOD

  1. Preheat the oven to 350° F. 
  2. Put the beetroot, eggs, oil and lemon juice in a food processor, and blend until smooth.
  3. In a bowl, whisk together the flour and sugar.
  4. Add the blended beetroot mixture, and mix until smooth. 
  5. Add the baking powder and mix until fully incorporated. 
  6. Pour the batter into silicone cake moulds. 
  7. Bake for 30 minutes, or until you a pick comes out clean. 
  8. Top with melted dark chocolate, and enjoy!
