Egg Burritos

With this hot weather, we're all feeling like something lighter for breakfast. These egg burritos are super filling but aren't heavy, and you can jazz thzm up to your liking.

Simply prepare a French omelet and add whatever you like! We like a sprinkling of herbs, such as dill, parlsey, or cilantro. If you're looking for a bit more protein, why not add sausage or ham? Chives are also a good shout as they give the omelet a little more bite, and some people like to add a touch of creaminess by using cream cheese.

Once you've added your ingredient/s, roll the omelet up and you have yourself a tasty egg burrito!

Did you know you can toast sweet potato slices... and it's absolutely delicious!

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
