Vanilla Traybake

This sheet cake is a vanilla dream and almost bakes itself. If you prefer, you can leave out the cream or add some chocolate to the batter. 

Ingredients:

For the dough:

  • 5 eggs
  • 1 cup + 1/4 cup sugar
  • 1 cup + 1/4 cup flour
  • 1 sachet baking powder
  • 1 sachet vanilla pudding powder

For the cream:

  • 2 cups + 1/4 cream
  • 3 sachets cream stiffener
  • 1/2 cup white chocolate (cut into chunks)

Instructions:

  1. Preheat oven to 350°F. Grease a baking tray.
  2. Beat the eggs and sugar until frothy, then gradually add the other ingredients. 
  3. Add the flour, baking powder, and vanilla pudding powder.
  4. Pour into greased baking tray and bake for 20 mins.
  5. Whip cream with the cream stiffener until stiff, and carefullt fold in the white chocolate. 
  6. Remove cake from oven. Allow the cake to cool before spreading over the white chocolate mixture.
  7. Enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
