Meatballs

Homemade meatballs take a little more time and effort, but the good thing is you can make an enormous batch at once and freeze the rest for later. Experiment with different ground meats or even veggie-based recipes. Here's our easy recipe for BBQ baked chicken meatballs. They make excellent leftovers for the rest of the week.

Leftover ideas: Meatball sammies, fried-rice toppers, salads, lettuce wraps, chopped for a pizza topper, soups, skewers and casseroles.
