Price Street Pizza’s “Spicy Spring” Pizza

Prince Street Pizza is best known for its iconic Sicilian square-style pizza. Crowds gathered all festival long to snag a slice of the Spicy Spring pepperoni pizza on a crispy, fluffy crust. Here’s how to bring the perfect pie to your dinner table. 

Ingredients (for one 12-inch square pizza):

Toppings

  • 1 cup Fra Diavolo Sauce
  • 2  cups fresh, grated mozzarella 
  • ½ cup grated Pecorino Romano

Pizza Dough

  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 ½ cups warm water 
  • 1 tbsp honey or sugar
  • 3 ½ cups all-purpose flour
  • 2 tbsp olive oil
  • 1 ½ tsp salt 

Instructions:

  1. In a small bowl, combine the warm water, honey (or sugar), and yeast. Let it sit for about 5-10 min. until the mixture becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough starts to form.
  3. Transfer the dough to a floured surface and knead for about 5-7 min., or until the dough becomes smooth and elastic. Add more flour if the dough is too sticky.
  4. Place the dough in a lightly oiled bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
  5. Once the dough has risen, punch it down to release the air. Transfer the dough to a lightly oiled 9x13 inch baking dish or a similarly sized sheet pan. Press the dough evenly into the pan, covering the bottom. If the dough resists, let it rest for a few minutes and then continue pressing.
  6. Second rise (optional): If you have time, you can let the dough rise again in the baking dish for about 30 min. to 1 hour. This step is optional but can add extra fluffiness to the crust.
  7. Preheat your oven: Preheat your oven to its highest temperature, typically around 475-500°F (245-260°C). If you have a pizza stone, you can place it in the oven while preheating, although it's not necessary for this recipe.
  8. Add the fra diavolo sauce, sliced pepperoni, mozzarella, and pecorino romano to the dough in the baking dish.
  9. Carefully transfer the baking dish to the preheated oven. Bake for 15-20 min., or until the crust is golden brown and the pepperoni is crisp 
  10. Let the pizza rest for 5-7 min. before slicing and serving. Cut into squares and enjoy!
