  • 24 large eggs ( about 2 dozen)
  • 2 large Bell peppers ( I use red for a sweeter flavor)
  • 1 large white onion
  • 2 tablespoons of extra virgin olive oil
  • Cheddar Cheese ( I use light pre shredded chedder or for a kick use pepper jack!)
  • Low Sodium Turkey Bacon
  • 1 package 16 ounce mushrooms
  • Salt and pepper to taste ( I use low sodium salt for a healthier option)
  • 1 package tortillas

Here is a lighter version of the traditional italian pasta salad

  • 1 pound whole wheat short pasta, such as fusili, bowtie or penne
  • 1 pint cherry or grape tomatoes, halved
  • 1 cup pearl-sized fresh mozzarella, drained
  • 1/4 pound salami, ( I use turkey salami) sliced about as wide as the pasta you are using
  • 1/2 red onion, thinly sliced
  • 1/2 cup loosely packed basil leaves, julienned
  • 1/4 cup balsamic vinegar
  • 2 to 3 tablespoons extra-virgin olive oil (use the lower amount if you prefer a more tart dressing)
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon fine-grain sea salt
  • 1/2 teaspoon crushed red pepper flakes

Who say's comfort food doesn't have to be healthy? Here is my recipe for Skinny Italian Lasagna enjoy!

  • 3 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • ½ – 28 oz. can of chopped tomatoes
  • ½ – 18 oz can of tomato paste
  • ½ tsp sugar
  • ½ tsp dried oregano
  • 2 tbsp fresh basil
  • 2 pinches crushed red pepper
  • 1 lb fat free turkey ground beef
  • 8 ¾ oz lasagna sheets
  • 8 oz mozzarella cheese, thinly sliced or you can use shredded it melts better if preffered but fresh always tastes the best!
  • 3 ½ oz fresh parmesan cheese, grated
  • 3 Tablespoons + 1 teaspoon (1 ¾ oz) plain flour
  • 3-1/8 cups of milk
  • 2 ¾ oz butter fat free
  • Salt and pepper

My mother used to make this bread every christmas

  • ½ cup milk (at room temperature)
  • 2 eggs (at room temperature)
  • ½ – 1 tsp salt (I always use less salt, so I added ½ tsp)
  • 3 tbsp liquid honey
  • ¼ cup butter cut into 1 inch cubes
  • 2½ cups all purpose or bread flour
  • 1 tbsp grated orange zest
  • 1 tbsp grated lemon zest
  • 1 tsp anise seeds (I left these out)
  • 1 tbsp bread machine or instant yeast
  • ½ cup golden raisins
  • ½ cup mixed candied peel (see notes)
  • 1/3 cup candied citron (see notes)
  • ¼ cup silvered almonds
