Grandma Katrina's Russian Cabbage Rolls ( Golubtsy)

Here is my grandma Katrina's russian recipe for stuffed cabbage rolls, only I made them healthier!
- big loose head of white cabbage
- 1 lb turkey ground
- 1 + 1 onions, chopped
- 1/2 cup rice pre-boiled in 2 cups of water( I omit this for a low carb option)
- 1 small carrot, finely grated
- 2 big ripe tomatoes, diced
- 3 tbsp olive oil
- Salt
- Pepper
- Red pepper (optional)
- Filtered water, about 1 - 1 1/4 cups
- 1 big pot to boil cabbage
- 1 frying pan
- 1 Dutch oven or big shallow pot with lid
- Preparation time: about 2 hours
Grandpa's Summertime Pickles

Here is my grandpa's recipe for summertime pickles he always used to make after my grandparents would get back from
- 12 pickling cucumbers
- 2 cups water
- 1 3/4 cups distilled white vinegar
- 1 1/2 cups packed coarsely chopped fresh dill
- 1/2 cup sugar
- 8 garlic cloves, chopped
- 1 1/2 tablespoons coarse salt
- 1 tablespoon pickling spice
- 1 1/2 teaspoons dill seeds
- 1/2 teaspoon dried crushed red pepper
Russian "Piroshki"

Here is a low fat version I made of my grandma katrina's "piroshki" traditionally they are meat and cabbage filled ...
- 1 medium head cabbage grated ( I grade this on a cheese grater the old stand up aluminum kind)
- 1 onion, chopped
- 1 tsp. dried thyme leaves
- 1 tsp. salt and pepper to taste
- Flaky Butter Pastry (recipe follows)
- 1 egg
- salt and pepper to taste
- extra virgin olive oil
- Smart Balance buttery sticks
- 3 cups all purpose flour
- 2 tbs low fat milk
- 1 tbs lemon juice
Russian "Vinegret" ( Beet Salad)

Here's a low fat version of my Grandma Katrina's russian beet salad called "vinegret" enjoy!
- 1 lb cooked beets, peeled and diced
- 1/4 cup sour cream fat free
- 4 tbs mayonnaise fat free
- juice of half a lemon
- 2 tsp sugar
- salt and pepper to taste
- 1 handful chopped fresh dill or parsley for garnish
- 1-2 scallions
- 1-2 dill pickles
- 1 hard boiled egg
- 1 small cucumber peeled and cubed
- extra virgin olive oil
Greek Dolmades

My Greek stepfather's favorite was dolmades, (stuffed grape leaves) and I remember my mother in the kitchen making
- 1/2 cup pine nuts
- 1 ½ cups long grain white rice
- 1 medium onion, minced
- 1/2 cup fresh minced dill
- 1/4 cup fresh minced mint
- 6 tbsp freshly squeezed lemon juice, divided
- 1 tbsp lemon zest
- 1 3/4 cups vegetable broth (a yellow broth is best), divided
- 50 large grape leaves (fresh or jarred)
- Salt and pepper
- 1/2 cup extra virgin olive oil
- Fresh mint leaves, lemon slices, and olives (for garnish - optional) you may buy the jarred ones but fresh is the best tasting and more authentic!

- 3/4 cup sliced or slivered almonds

- 1/4 teaspoon vanilla
- 1/4 teaspoon ground cinnamon
Armenian Tabbouleh Salad

Here is a perfect light lunch or dinner, healthy tabbouleh salad
- 1 cup bulgur wheat, fine or meduim grain
- 1 cup boiling water
- ¼ cup lemon juice
- zest of one lemon, about 1 tsp.
- 2 garlic cloves, minced
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil
- ½ cup scallions, (about 2) chopped both white and green parts
- 1 pint cherry tomatoes (1 ½ cups) sliced in half
- ½ cup flat leaf parsley, chopped
- 2 tablespoons fresh mint, chopped

- Nonstick olive oil spray
- 2 12-ounce eggplants, peeled, cut lengthwise in half, cut crosswise into 1/2-inch
- 1 1/2 pounds medium zucchini, trimmed, cut into 1/4-inch-thick rounds
- 1 pound red-skinned potatoes, cut into 1/4-inch-thick rounds
- 1 teaspoon olive oil
- 2 cups chopped onion
- 1 tablespoon minced garlic
- 2 teaspoons dried oregano
- 1 pound lean ground beef sirloin or ground round
- 1 28-ounce can whole tomatoes in juice
