Sweet chilli chicken

- Ingredients
- 600g chicken thigh fillets (about 4 pieces), cut into 1 inch cubes or strips
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp sesame oil
- 1/4 cup plain flour
- 2 tbsp cornflour
- 2 tbsp glutinous rice flour
- 1/2 egg, beaten
- Vegetable oil for frying
- 15-20 french beans
- 2 cloves garlic, chopped
- Sauce (combine in a bowl):
- 1/2 cup Thai sweet chilli sauce
- 1 1/2 tbsp Sambal Oelek (or to taste)
- 1 tsp light soy sauce
- 1 1/2 tbsp corn syrup (optional, for sticky-factor)

Heat oven to 180C/160C fan/gas 4
- 6 large Bramley apples, finely sliced
- 200g unsalted butter
- 140g raisins
- 100g soft brown sugar
- 4 eggs
- 200g self-raising flour

- 4 cloves garlic
- 2-4 small chillis
- 1 1/2 glass white wine
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- 1/2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp mustard powder
- 1/2 tsp xanthen gum
- 1/4 tsp coriander
- 1/4 tsp chilli powder
Summer Dessert Pizza

In a small bowl, cream butter and sugar until light and fluffy
- Ingredients
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon lemon extract
- 1-1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- GLAZE:
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 1/4 cup water
- 1/4 cup orange juice
- TOPPING:
- 4 ounces cream cheese, softened
- 1/4 cup confectioners' sugar
- 1 cup whipped topping
- 1 firm banana, sliced
- 1 cup sliced fresh strawberries
- 1 can (8 ounces) mandarin oranges, drained
- 2 kiwifruit, peeled and thinly sliced
- 1/3 cup fresh blueberries
Peter's cheesy cheese scones

- 500ml flour (2 cups)
- 15ml baking powder (3 tsp)
- large pinch salt
- sprinkle of cayenne pepper/chilli powder (optional)
- 250ml strong cheddar cheese
- 15 ml vegetable oil (3 tsp)
- 125 ml milk (maybe a bit more depending on how it mixes)
- 1 egg
Thai red vegetable curry

Whizz the paste ingredients and 2 tbsp soy sauce, juice 1 lime and the chopped chilli in a food processor
- 4-5 tbsp soy sauce
- juice 3 limes
- 2 red chillies, 1 finely chopped, 1 sliced into rounds
- 2 tbsp vegetable oil
- 400ml can reduced-fat coconut milk
- 1 courgette, chopped into chunks
- 1 small aubergine, chopped into chunks
- ½ red pepper, deseeded and chopped into chunks
- 140g mushrooms, halved
- 140g sugar snap peas
- 20g pack basil, leaves picked
- 1 tsp brown sugar
- jasmine rice, to serve
- For the paste
- 3 red chillies
- 1 lemongrass, roughly chopped
- 3 shallots, roughly chopped
- ½ red pepper, deseeded and roughly chopped
- zest 1 lime
- stalks from 20g pack coriander
- thumb-size piece ginger, grated
- 2 garlic cloves
- 1 tsp freshly ground pepper
- 1 tsp ground coriander
Chocolate cake

Preheat the oven to 180C/350F/Gas 4
- For the cake
- 225g/8oz plain flour
- 350g/12½oz caster sugar
- 85g/3oz cocoa powder
- 1½ tsp baking powder
- 1½ tsp bicarbonate of soda
- 2 free-range eggs
- 250ml/9fl oz milk
- 125ml/4½fl oz vegetable oil
- 2 tsp vanilla extract
- 250ml/9fl oz boiling water
- For the chocolate icing
- 200g/7oz plain chocolate
- 200ml/7fl oz double cream
