Dijon Salmon

Pre heat oven to 450 ° In a medium bowl combine all ingredients (except for fillets) Mix well
- 5 6oz salmon fillets
- 2 Tbs fresh chopped parsley
- 3 cloves of chopped garlic
- 1 1/2 tsp of Dijon mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 Tbs olive oil
- 1 Tbs fresh lemon juice
Marinated Bean Salad

Can be made a few days ahead and kept in the fridge
- 2 TBS minced onion
- 3 medium cloves garlic pressed
- 2 cups fresh green beans cut into 1-inch lengths
- 2 cups or 1 15 oz can lima beans drained and rinsed
- 2 cups or 1 15 oz can kidney beans drained and rinsed
- 1 large ripe fresh tomato chopped
- 2 TBS chopped fresh basil or 2 tsp dried basil
- 1 TBS chopped fresh oregano or 1 tsp dried oregano
- 1 TBS chopped fresh parsley or 1 tsp dried parsley
- 3 TBS fresh lemon juice
- 2-3 TBS extra virgin olive oil
- salt and cracked black pepper to taste
Spinach Salad with Tuna and Avocado

- 3 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- 1 Tbsp water
- 1 tsp Dijon mustard
- 1 ripe Hass avocado cut in half pitted and peeled
- 1 pinch cayenne pepper
- Salt
- 2 Tbsp fresh flat-leaf parsley leaves finely chopped
- 2 Tbsp snipped fresh chives
- 1 package 5-ounce baby spinach
- 2 stalks celery thinly sliced
- 1 medium red pepper thinly sliced
- 1 can 15-ounce white kidney beans rinsed and drained
- 2 cans 5 ounces each tuna packed in water drained well
