Shrimp and caramelized Pineapple Ravioli with an Emulsion of Ginger Lemon Grass

Ingredients

  • 16 fresh shrimp
  • 1/2 Pineapple
  • 1 pack ravioli dough
  • 1/4 bunch of lemon grass
  • 2 shallots
  • 1 garlic clove
  • 1 tomato
  • 1/2 lemon
  • 1 inch piece of fresh ginger
  • scant 1/2 cup of olive oil
  • 1 tablespoon of tomato juice
  • scant 1 cup of cream
  • salt and pepper

Preparation

Step 1

Peel the shrimp, season and heat them for 1 minute with olive oil. Cook the pineapple diced also for 1 minutes. Create
the ravioli stuffing with the half of the shrimp and pineapple.

Step 2

Heat shells and the shrimps heads in olive oil with the shallots, garlic, tomato and lemon. Add the lemon grass, water and grated ginger. Cook it for 20 minutes, strain. Add the cream, season and mix.

Step 3

Roll the ravioli pastry and place the stuffing in the middle of them. Finish them with an other sheet of pastry dough and poach them for 1 minute in a warm water.

Step 4

Garnish the soup plate with the cream, the raviolis and the rest of the shrimp as a decoration.
