  • 2 large eggplants
  • 2/3 cups tahini
  • 1/2 of an onion
  • 2 garlic cloves
  • 2 TBS lemon juice
  • 1/2 cup parsley
  • 1 1/2 TBS Bourbon Smoked Salt
  • 2 TBS Bourbon Smoked Pepper
  • 2 tsp Bourbon Smoked Paprika (plus more for garnish)

Preparation

Step 1

Grill whole eggplants and onion for about 15 minutes (turning occasionally). If you don't want to grill, you can also cook the eggplant and onion on a stove top. When the eggplant is cool, peel off the skin. Chop eggplant and onion into cubes, and put both into a food processor. Process for 1 minute. Scrape down the sides and add all other ingredients. Garnish with olive oil and Bourbon Smoked Paprika and serve with pita chips!
