Cheeseburger Pie

An easy to make one dish recipe with cornbread on the bottom meat and vegetables on top

Ingredients

  • Two pounds of lean ground beef, two cans of string beans, two cans of mexican corn, two cans of golden cream of mushroom soup, (prefer Campbells) two boxes of Jiffy cornbread mix, two eggs and 1/2 cup of milk, 1-1/2 cup of shredded cheddar cheese, slices of American cheese or sprinkle more cheddar cheese to garnish the top

Preparation

Step 1

Brown meat until done, add very little salt if desired and pepper to taste, the vegetables, soup and cheese will have salt in them and drain grease

Step 2

Stir in vegetables and soup and let it come to a slight boil, adding cheese last just before pouring into baking dish

Step 3

Pour mixture into a 9x12 or 13 nonstick baking dish

Step 4

mix jiffy mix according to directions using the two eggs and milk. When blended well pour over the meat and vegetables covering well

Step 5

bake at 400 degree oven for 30 min. or until cornbread is a golden brown. Let stand for about ten minutes befor cutting

Step 6

Cut into squares and turn upside down on plate with bread on bottom, top with cheese if desired
